Rostov chicory is a traditional product of the Yaroslavl region, which is deservedly considered one of the gastronomic symbols of Rostov the Great. This is the roasted and crushed root of the Cichorium intybus plant, which is used to make a drink that resembles coffee, but with a slight bitter woody or nutty tint. Chicory in Rostov district began to be cultivated as a commercial crop in the 1790s-1800s. Ilya B. Zolotakhin, a peasant from the village of Porechye, played a key role in the development of the fishery. He mastered the technology of growing and processing chicory while working for the German entrepreneur Gakman in Vyborg. After returning home, he laid the foundations of local production. Chicory drink:
- improves digestion;
- has astringent and disinfecting effect;
- helps improve liver and kidney function;
- it is an alternative to coffee for people with caffeine restrictions.
